Great, for specifications are you looking for are typically heavily influenced by specific manufacturer product and 'open' specifications are hard to find.

Take for example this Architectural spec for an Alvarado optical turnstile.  Here is the Product spec sheet too. As examples, those help, although Scott N's suggestion below of using 3 to compare and get general specifications from is a good insight.

In terms of proper sizing, the number of turnstiles (and handicap gates) are determined by the flow rate of people in a given amount of time.

For example, if a turnstile is designed to handle 10 people per minute, and 200 people need to flow through in a 15 minute time. The sizing formula looks like this:

(Total Number of People) / ((Flow through turnstile per min) * (Number of mins available)) = (Number of Turnstiles)

200/(10*15) = ~2 turnstiles (1.3 units rounded up)

The specification of gates is typically defined by life/safety/accessibility codes. In the US, if the turnstile does not offer a 32" unobstructed opening, then an accessible gate needs to be installed.  However, the need, design, and flowrate specifications are a function of product design set by the manufacturer.

In many cases, additional gates are not needed with 'flap' or optical turnstile units.

Nine times out of ten the manufacturer has ready made construction specs available on their website, occasionally you need to call them to get a copy but not often.   I try to secure at least three specs and I will compare them.  If the basic operating parameters are the same (or close) for all three I will put the minimums in my SOW, and then add a comment along the lines of "the following brands are acceptable" so that people understand exactly what I am looking for. If the manufacturer does not provide a CSI spec a lot of times the datasheet and engineering documents will provide nearly everything you need to extrapolate a decent spec, it just takes more time.
