Onboard Storage - Promising 30/60/90 Days - How?

A while back I think I remember an article or two that detailed/hypothesized how cameras/companies like Verkada (others) can retain footage onboard (or in the cloud) for 30/60 - 365 days.

I'm looking to learn more about how they achieve their "promised retention values" so I can better sell against it. I assume they limit/average bitrate, using variable FPS, maybe dynamic resolution, record motion events only, etc.
