Looking For Input On Running Cat 5e Overhead Between Two Buildings

I have an exterior installation at an agricultural facility with extremely harsh conditions (summer temps over 115).

They are currently running the cable zip tied to the top of a fence rail with a POE extender about 1/3 of the way from the NVR. Considering an overhead run between buildings as it would cut the distance substantially and possibly even eliminate the POE extender. I wondered if anyone has any input/suggestions/best practices.
