Windows Vs Linux For DW Spectrum Server

I recently spect out a job where i will be using a DW 1U P-rack server for 24 4mp DW cameras and 1 5mp DW fisheye. Just curious what are the pros and cons of me ordering my server with Windows vs Linux and given the amount of cameras would you recommend upgrading the Ram from 8 to 16 and or upgrading the processor from an i5 to an i7?
