I need to do battery and voltage calcs for an access control system using Life Safety Power cabinets. The calculators on their site are pretty basic and locked down. I'm looking for an unlocked sheet that I can add in all of my devices, change quantities, and autosum the totals.

Manufacturer calculators are typically going to lock into options for their part numbers/products for variables.
The good news, usually the math is straightforward. Is everything you're calculating the same voltage (ie: 24 VDC) or is that part of the conversion you're figuring?
Are you engineering or estimating? If you are the Engineer I strongly suggest one put the time into understanding the formulas to perform the calculations correctly. Taking the time to build a simple calculator in excel is a good place to start and once you see your excel formulas output the results you will also find a reward.
If you are estimating, their are plenty of online calculators that will do exactly what you ask for.
To get started, simple google 'calculating battery c-rate'. After perusing about 20 variations of calculators, examples and equations online you should get enough basics to start building your own calculator in excel. YouTube is another resource that can speed up the learning process.
You mention life safety, I know that is a power supply brand however if are the Engineer you absolutely need to be able to perform the calculations with your own tools to assure design specifications and requirements are qualified. Tools - Excel(good), paper & pencil(better). Life Safety is no joke, priority #1.
Thanks. I am very comfortable with the properties and doing the calculations manually. I was trying to find something like what I used to use for fire alarm systems years ago where I can add in each device.
I was just looking for a basic template where I can "show my work" as part of a submission package. Neither the Access Control manufacturer (Gallagher) or the Power Supply (LSP) have one where I can add in the standby and alarm of each device.
I read this as "edible" and it was funny.
