Cambium is nice stuff, I like them. I think one P2MP hub should be enough. And the stuff you said seems good.
Disclaimer: Never been doing P2MP, only PTP.
If cost is an issue, look at Ubiquiti.

Vendors that support WISP's can do the setup for you,
ie. buy as a package with setup included.
How many cameras will be on each pole? If you say 1 or 2 cameras then one AP should be fine. If you plan on having 3+ cameras per pole I would have provisions for 2 APs.
